Mari saya terangkan dengan cara mudah dan saintifik.<\/p>\n<p>\u00a0<\/p>\n<p>Jom dapatkan perkongsian bermanfaat berkaitan kesihatan, pemakanan, motivasi dan ubat-ubatan di page Dr Zubaidi Hj Ahmad.<\/p>\n<p>\u00a0<\/p>\n<p>1\ufe0f\u20e3<strong> JENIS GULA DALAM MADU KELULUT BERBEZA<\/strong><\/p>\n<p>Madu kelulut mengandungi lebih banyak fruktosa (gula buah) berbanding glukosa.<\/p>\n<p>\u27a1\ufe0f Fruktosa tidak mudah menghablur (kristal), sebab itu madu kelulut kekal cair walaupun dalam suhu sejuk.<\/p>\n<p>\u27a1\ufe0f Madu lebah biasa pula tinggi glukosa, jadi ia lebih mudah memejal bila disimpan dalam peti sejuk.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>2\ufe0f\u20e3<strong> Kandungan air madu kelulut lebih tinggi<\/strong><\/p>\n<p>Madu kelulut biasanya mempunyai kandungan air 25\u201335%, sedangkan madu lebah biasa sekitar 18\u201320%.<\/p>\n<p>Kandungan air yang tinggi ini menjadikan teksturnya lebih cair dan tidak membeku walaupun dalam peti ais.<\/p>\n<p>Jika simpan terlalu lama, ia boleh berlaku sedikit proses fermentasi semula jadi \u2014 tanda madu aktif dan asli.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p><strong>3\ufe0f\u20e3 Enzim &amp; sifat semula jadi madu kelulut<\/strong><\/p>\n<p>Madu kelulut masih \u201chidup\u201d \u2014 kaya dengan enzim, asid organik, probiotik dan antioksidan semula jadi.<\/p>\n<p>\u27a1\ufe0f Sifat biologi ini menyebabkan ia mengekalkan keaktifan cecair, sukar beku seperti madu komersial yang sudah diproses haba.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p><strong>4\ufe0f\u20e3 Suhu peti ais tidak cukup rendah untuk beku madu tulen<\/strong><\/p>\n<p>Kebanyakan peti sejuk domestik berada sekitar 2\u20135\u00b0C, bukan suhu pembekuan penuh.<\/p>\n<p>\u27a1\ufe0f Madu tulen (terutama yang tinggi fruktosa) takkan membeku pada suhu ini \u2014 ia hanya menjadi sedikit likat.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p><strong>5\ufe0f\u20e3 Tapi awas jika madu terlalu cair<\/strong><\/p>\n<p>Jika madu terlalu cair dan berbuih berlebihan, mungkin ada kelebihan air semasa proses tuai atau fermentasi berlebihan.<\/p>\n<p>\u27a1\ufe0f Solusi: buka penutup sekejap-sekejap bagi lepaskan gas semula jadi atau simpan di suhu bilik dalam bekas kedap udara.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>Anda ada banyak soalan?
