Gula perang sebenarnya adalah gula putih yang dicampurkan 3-5% molasses. Molasses adalah kerak gula yang terhasil ketika penghasilan gula putih.<\/p>\n<p>\u00a0<\/p>\n<p>2. Kandungan peratus molasses menentukan warna gula perang. Semakin banyak molasses yang ditambah, semakin gelap gula perang.<\/p>\n<p>\u00a0<\/p>\n<p>3. Dalam gula putih terdapat sukrosa (94.75%) sementara dalam gula perang terdapat sukrosa (89.94%). Terdapat lebih banyak vitamin dan mineral dalam gula perang (yang berasal dari molasses tadi) berbanding dengan gula putih (tiada molasses).<\/p>\n<p>\u00a0<\/p>\n<p>4. Selain itu gula perang sedikit kurang manis dan nilai kalorinya kurang sedikit berbanding dengan gula putih.<\/p>\n<p>\u00a0<\/p>\n<p>5. Setiap 100 gram gula perang mengandungi kalori yang tinggi (370kcal) manakala gula putih ada 395kcal. Ini kerana kandungan gula perang merangkumi 95-97% sukrosa dan 3-5% molasses sementara gula putih mengandungi 100% sukrosa.<\/p>\n<p>\u00a0<\/p>\n<p>6.
