{"id":11601,"date":"2020-09-22T14:24:46","date_gmt":"2020-09-22T06:24:46","guid":{"rendered":"http:\/\/drzubaidi.com\/blog\/?p=11601"},"modified":"2026-04-22T10:33:34","modified_gmt":"2026-04-22T02:33:34","slug":"alternatif-msg","status":"publish","type":"post","link":"https:\/\/drzubaidi.com\/blog\/alternatif-msg\/","title":{"rendered":"ALTERNATIF MSG"},"content":{"rendered":"<p>\u00a0<\/p>\n<p>Kita menggunakan MSG untuk menambahkan rasa sedap masakan kita.<\/p>\n<p>\u00a0<\/p>\n<p>MSG atau <strong>Monosodium Glutamate<\/strong> adalah garam sodium yang terhasil daripada asid glutamik yang terdapat secara semulajadi dalam makanan dan tumbuhan seperti ubi kayu, ubi kentang, setelah menjalani melalui <strong>proses penapaian<\/strong>.<\/p>\n<p>\u00a0<\/p>\n<p>Secara tradisinya, Jepun terkenal dengan pes Miso yang diperbuat daripada kacang soya yang melalui proses penapaian. Di Thailand menggunakan sos ikan yang ditapaikan. Di Malaysia menggunakan udang yang ditapaikan sebagai belacan. Namun proses penapaian ini adalah secara natural (semulajadi) tanpa sebarang kimia sintetik.<\/p>\n<p>\u00a0<\/p>\n<p>Antara sumber semulajadi yang mengandungi glutamate dalan mg\/100g.<\/p>\n<p>1. Keju parmesan (11680mg)<br \/>2. Cendawan (42mg)<br \/>3. Rumpai laut (550-1200mg)<br \/>4. Cendawan Shiitake(1060mg)<br \/>5. Tomato segar (246mg)<br \/>6. Jagung manis (106mg)<br \/>7. Ikan Sardin(260mg)<br \/>8. Ubi Kentang(180mg)<br \/>9. Ikan Bilis(660mg)<\/p>\n<p>\u00a0<\/p>\n<p>Oleh dengan menambah bahan-bahan tersebut, ia dapat menambahkan rasa sedap makanan tanpa menggunakan MSG.<\/p>\n<p>\u00a0<\/p>\n<p>MSG dianggap selamat di Amerika Syarikat. Di Malaysia (di bawah <strong>Akta dan Peraturan Makanan 1985<\/strong>), ia juga dianggap <strong>selamat<\/strong>.<\/p>\n<p>\u00a0<\/p>\n<p>Walaupun MSG dianggap selamat, saya mencadangkan sama ada kita meninggalkan MSG atau tidak menggunakan MSG dalam jangkamasa yang panjang.<\/p>\n<p>\u00a0<\/p>\n<p>MSG dikatakan boleh menyebabkan keguguran rambut, sakit kepala, masalah penyakit kronik.
